Location of the vineyards

Vineyards are situated
between 150m and 380m above sea level, on the hills which raise above
the northern bank of the Corbara lake. Depending on the vineyards, the
exposure varies from south-west to south and up to east-south-east. Wine
making is done in the cellars of Salviano and ageing in the caves which
are dug in tuff placed under the castle. |

Wine making and conserving |

Musts of different grape
varieties, harvested separately are chilled and separated for static
purification of solid particles in suspension and then fermented at
controlled temperature in steel air-conditioned tanks. After wine
decanting, at the point of alcoholic fermentation, this wine is
conserved in cement tubs until it si to be bottled. |
