Vineyards are situated
between 350m and 500m above sea level, on the hills which raise above
the northern bank of the Corbara lake. Depending on the vineyards, the
exposure varies from south-west to south and up to east-south-east and
the soil has decay origins of the same type of tumefied rock where the
antique wine cellar of the company was dug. |

Wine making and conserving |
|
Musts of different grape
varieties, harvested separately are chilled and separated for static
purification of solid particles in suspension and then fermented in
barriques where the wine remains for four to five months. After wine
decanting, the wine is
conserved in cement tubs until bottling which happens at the end of
March. |

Organoleptic Characters |
|
The freshness and
intensity of the smell of grapes are well combined with aromatic notes
and tannins as a result of the wine making technique in barriques. The
wine is fruity and floral but not sickly. It is savoury and rounded to a
palate but persistent and elegant. Aromatic freshness and complexity of
is texture are well made up for the color typical stranght of Salviano. |
