Characteristics of the
soil |
|
Vineyards are situated
between 150m and 380m above sea level, on the hills which raise above
the northern bank of the Corbara lake. Depending on the vineyards, the
exposure varies from south-west to south and up to east-south-east and
the soil with a high content of limestone limits individual grapes
protucion very much even considering more than 5,000 stumps per hectare.
Wine making is done in the cellars of Salviano and ageing in the caves
which are dug in tuff placed under the castle. |

Wine making and conserving |
|
Grapes of different
varieties are harvested and vinified separately. Permanence of wine-must
on its skins is prolonged for 15 to 20 days at controlled temperature.
After drawing off of wine from a vat, malolactic fermentation happens
and wine is put in French first and second passage barriques, always
keeping apart the different types of grapes. Ageing varies from 18 to 20
months depending on the vintage and therefore the different hupe of
wines get assempled and after a short period of stabilisation it si
continued with bottling for consequent refinement. |

Organoleptic characters |
|
Very
intense colour and sharp tonality results to be very fruited and spiced
to a nose, with a note of ripe fruit with vanilla scent. Tannins are
soft and encircling, well fused between them, wood isn't invasive and
exuberant texture is mellow and rounded. Very important wine suitable
for ageing and conserving. |
