Characteristics of the
soil |
|
Vineyards are situated
between 250m and 380m above sea level, on the hills which raise above
the northern bank of the Corbara lake. Depending on the vineyards, the
exposure varies from south-west to south and up to east-south-east and
the soil with a high content of limestone limits a unitary
production. Wine making and ageing is done in the cellars which are dug
in tuff placed under the castle of salviano. |
|
Wine making and conserving |
|
Fermentation in small steel tubs at controlled temperature. Steeping is
prolonged to the maximum of 12 days. Pumping happens frequently
especially during the first days of alcoholic fermentation. Malolactic
fermentation lasts 20 to 25 days with a constant temperature around 20
to 22 degrees. Conservation happens in cement vitrified tubs while one
part gets passed to barriques to guarantee the best complexity of
product. |
