Location of the vineyards

Vineyards are situated
between 150m and 500m above sea level, on the hills which raise above
the northern bank of the Corbara lake. Depending on the vineyards, the
exposure varies from south-west to south and up to east-south-east. Wine
making is done in the cellars of Salviano and ageing in the caves which
are dug in tuff placed under the castle. |

Wine making and conserving |

Harvesting in cases, wine
pressing, separation for purification of solid particles of must,
passing in barriques already used for white wine, inoculation of yeasts
and fermentation in places of the underground wine cellars at room
temperature until reaching alcoholic gradation of 14,50% so wine
decanting and filtration followed by cool sterile bottling in April in
May. Technique is similar to the production of white wines; the
difference is in difficulty of managing small quantities at one time
based on scaling of grape harvest and on different varieties used. |

Organoleptic characters |
|
Thanks to a good
organisation and timely harvesting, the wine is very concentrated,
elegant and subtle to smelling, full and intense, with an excellent
bouquet that comes from both pure aromas of the grapes and particular
notes appointed by development of noble rot. Aromatic and acidic
freshness which makes the wine pleasant and inviting can be added to
above characteristics. |
